We are using the caret, which is pretty much the standard icon for toggling elements.
If you want to change that, you can do it with a template override of the file: modules/mod_jfilters_filters/tmpl/default.php
Check the $chevronSVG var that used to store the contents of the svg icon.
Also how do I change the word in the Clear option to Clear all selections?
You want to change the word or add a "Clear All" link?l
If you want to do the 2nd, you better create a custom module with a link of your preference and put it below the "JFilters Filters" module.
