In Contacts, i have different Categories. How can i choose a specific category for the filter? In the Menu? (jfilters >>results) in the Module? Somewhere in the Component? At the moment i use the filter, and i see als tags from another Category.

I am not sure that i understand the question or the goal of it.
In case you have your Categories filter in published or listening state, your filters will be relative to the selected category.
That category variable can come from anywhere where a category can be selected (menu item, category module, jflters module, etc.).
This is by design.
We want our filters to collaborate with the other elements of the website on the same context.

Now I'm not sure if I've understood you correctly.
I have 2 categories in "Contacts". One for members and one for associations. I have assigned tags to all contacts (from both categories). Now I want to set up a jFilters module that only shows the contacts of a certain category. Unfortunately, all tags that are assigned to a contact address are always displayed. From all categories.

As long as you load your JFilters module in one of those category pages, your loaded tags will be relevant to that items of that category. The only requirement for that is to have your Categories filter for Contacts in a published or listening state.
The Jfiltes module is versatile enough to load filters relevant to the visited page.
